Spinach Enchiladas

Ingredients

    1 cup hot rotel
    1 can Spinach
    1 cup onions, chopped
    1 T Minced Garlic
    6 8" Whole Wheat Tortilla
    3 oz Cheddar or Colby Cheese, Low Fat

    1 cup Enchilada Sauce

Directions

Mix tomato (rotel) spinach, onions, garlic together.

Place 1/2 c. on each tortilla...roll up.

Place in shallow baking pan
Top with Enchilada sauce.
Sprinkle cheese on top.\

Bake 37' for 35 minutes
