Turkey stuffed red bell peppers

Introduction

Easy, low cal dinner, great for leftover lunch the next day. My family likes red peppers but green can be used also. Easy, low cal dinner, great for leftover lunch the next day. My family likes red peppers but green can be used also.
Number of Servings: 8

Ingredients

    Stuffing:
    1 medium onion, chopped
    1 tbsp olive oil
    1 lb.Turkey, Ground turkey, 93% lean, 16 oz
    3/4 cup egg whites or egg substitute
    11/2 cup, dry Instant or quick oats
    1 cup celery, raw, diced
    3 cup mushrooms chopped
    4 tsp Worcestershire Sauce
    3 tsp Italian Seasoning (oregeno, basil, )
    1 16 oz can diced tomatoes
    3/4 cup Parmesean grated, set aside 1/4 cup for garnish

    4 large bell peppers, red or green, sliced in half lengthwise, seeds removed

Directions

Preheat oven to 350.

Saute onion in olive oil until translucent.

Seperate a small amount of the cheese and set aside to sprinkle on top of peppers, before putting in oven.

Mix all the stuffing ingredients together in a large bowl.

Using an 11 x 9 glass baking pan plase the 1/2 peppers, cut side up in the pan then filled the peppers with the stuffing. Then sprinkle the remainder of the cheese across the tops of them and bake, uncovered, at 350 degrees for 45 minutes.

Makes 8 servings.
