Lentil Salad

Introduction

A delicious side dish with rotisserie chicken! A delicious side dish with rotisserie chicken!
Number of Servings: 8

Ingredients

    1 cup dry lentils
    1 cup finely diced carrot
    1 cup finely diced red onion
    2 cloves garlic, minced
    1/2 tsp. dried thyme
    2 T lime juice
    1/2 cup diced celery
    1/4 cup chopped cilantro
    1 tsp. salt
    1/4 tsp. black pepper
    1/4 cup olive oil

Directions

Combine lentils, carrots, onion, garlic and thyme in saucepan. Add water to cover by one inch. Bring to boil, reduce heat and simmer uncovered for 15 minutes. Don't overcook! Drain well then add olive oil, lime juice, celery, cilantro, salt and pepper. Mix well. Chill or serve at room temperature. Makes 8 3/4 cup servings.
