Vegetarian Lasagna

Introduction

Ingredients

    1.5 cups onion, chopped

    2 large broccoli crowns, chopped
    10 oz fresh spinach
    1 can mushrooms
    2 large garlic cloves, minced
    1 tbsp butter
    2 tbsp sherry or whatever white wine available
    16 oz cottage cheese
    8 oz mozzarella cheese, shredded
    2 eggs
    6 tbsp parmesan cheese, divided
    2 tsp parsley
    9 lasagna noodles, cooked
    1 can of Hunt's spaghetti sauce



Directions

Saute onions and garlic in butter and sherry until onions are translucent. Add mushrooms, broccoli and spinach. Cover and cook until broccoli and spinach are almost completely cooked. While the vegetables are cooking, combine cottage cheese, mozzarella cheese, 3 tbsp of parmesan cheese, eggs, parsley. Cover bottom of lasagna pan with a think layer of sauce. Cover with 3 noodles. Add layer of cheese (half the mixture) followed by a layer of vegetables. Spread .5 cup of sauce over vegetable layer followed by 3 more noodles. Repeat layer. Top lasagna with remaining sauce and 3 tbsp of parmesan. Bake uncovered at 375 for 35-40 min or until bubbly.
