Quinoa Tabouleh

Ingredients

    1/2 cup Quinoa
    1 1/2 cups water
    1/4 tsp. salt
    2 cups parsley, chopped
    1/2 cup mint, chopped
    1/2 cup basil, chopped
    1 medium cucumber, peeled, seeded and chopped
    1 tsp lemon rind
    3 to 5 tblsp. lemon juice
    1/2 olive oil
    1/2 tsp. salt
    pepper

Directions

Cook Quinoa, water and 1/2 tsp. salt for about 15 minutes. Take off burner and leave covered for 10 more minutes. Uncover and let cool to room temperature. Meanwhile cut up remaining ingredients and mix with cooled Quinoa. Toss together and serve.
