Tilapia with Cucumber Radish Relish

Introduction

Recipe modified to lower fat from recipe on package of fresh tilipia, purchased at Krogers. Not sure the calories are correct as the recipe calculator only calculates 12 ounces of Tilapia as 31.4 calories.
Tilapia is probably farm raised and therefore is at risk of high in mercury. Watch frequency of serving this fish.

Ingredients

    Relish / prep first to marinate.
    * Cucumber (with peel), 0.666 cup slices
    * Radishes, .5 cup slices
    * *Canola Oil, 1 1tsp
    * Tarragon, ground, 0.25 tsp
    * *Heinz Distilled White Vinegar, 0.333 tbsp
    * *Splenda, 0.25 tsp
    * Salt, 1 dash
    Saute' Fish
    * **Tilapia Fillet, 12 oz [2 six ounce filets.]
    * *Pam Cooking Spray - Buttery Flavor .5 second spray, 1 serving

Directions

Combine first seven ingredients in a small bowl before prepping the fish.. [original recipe said this was 4 servings. I use it as two servings] May allow to sit as long as desired.

Preheat saute pan over medium heat. Spray with PAM prior to adding the Tilapia. Saute 2-3 minutes on each side or until fish flakes easily when tested with a fork.

Transfer Tilapia to a serving plate. Spoon the cucumber mixture over each serving.
