Ummmm Good Breakfast Casserole

Number of Servings: 12

Ingredients

    1 box/pkg Seasoned Croutons
    1 pound Breakfast Sausage (your favorite, we prefer Jimmy Dean hot)
    1/2 c hash browns (frozen or fresh)
    1 c chopped onion
    1 c grated Cheese, cheddar
    2 c Milk, 2%
    4 to 7oz diced green chilies
    6 whole eggs, beaten
    Optional Seasonings: Dash salt, pepper, Mrs. Dash

    Preheat oven to 350 degrees. Butter 9x13 inch baking dish. Cook sausage in frying pan until no longer pink. Add onion and potatoes and cook with sausage until onion is transparent and potatoes are limp. Drain very well & crumble mixture. Layer 1)Croutons then 2)Sausage w/onion & potatoes and then 3)Cheese, set aside. Combine the remaining ingredients in a separate bowl and then pour over the sausage/cheese layers. Bake in 350 degree oven uncovered for approx. 40-50 minutes, until center is set. Remove from oven. Let sit for approx. 5 minutes before cutting into squares and serve.
    Yield: 8 t0 12 servings. Pan size: 9x13 inch.

    Serving suggestion: top w/green salsa which brings out all flavors of the casserole. Individual servings can be reheated in the microwave as needed over the next few days. Gets better each day. Also freezes well.

Makes twelve 2" squares in 9x13 pan.
