Pasta Primavera

Ingredients

    Parmesan Cheese, grated, 1/2 cup
    Chicken Broth or Bouillon, 1/2 cup
    1 Carrot chopped
    1 Celery stalk, chopped
    2 cloves garlic chopped
    1 small Onion chopped
    1 Zucchini, chopped
    1 sweet, red pepper, chopped
    2 Red Ripe Tomatoes, chopped
    1Yellow or Green pepper, med chopped
    Whole Wheat Spaghetti, cooked (pasta), 1Lb





    Chop all the vegetables to about the same size. Add garlic and onion to a sauce pan sprayed with Pam, saute til garlic begins to turn golden brown. Add all the vegetables except the tomatoes. Stir fry until tender but not brown, approx ten minutes. Add chicken stock and tomatoes, bring to boil, cook gently partly covered, while your pasta cooks.
    Cook pasta in large pot of boiling salted water 8-10 minutes or until al dente. Drain well. Place pasta in large bowl or platter. Add sauce and fresh grated parmesan cheese. Toss well, add salt and pepper to taste.
    Makes 4 - 6 servings.
