Black Bean Enchilladas

Ingredients

Beans, black, 2 cans, drained & rinsed
Roasted Red Peppers, 1 cup diced
Zucchini, .5 cup, diced
Spinach, fresh, .5 to 1 cup chopped
Yellow Sweet Corn, Frozen, 1 cup kernels
Onions, raw, 1 large diced (1 cup)
Salsa, 1.5 cup
Salt, pepper, & ciliantro to taste
Cheddar Cheese, .5 cup, shredded
Whole Wheat Tortilla, 8 serving
Directions
To make the filling combine the beans, red pepper, corn, onion. zucchini, spinach, and 1/2 cup salsa. Season to taste.
Place 1/2 cup of filling on each tortilla and roll-up. Place seam side down in a baking dish. Pour a strip of salsa over top each. Place in a 375 degree oven for 15 minutes. Sprinkle with cheese and continue heating until cheese is melted and bubbly and the enchiladas are heated thru.
Alternatively, make 2 at a time and place on a dinner plate, cover with wax paper and microwwave until heated thru, about 3 minutes.
Serve with additional salsa at the table. Guacamole or sour cream would be great on this if desired.
