Low-fat Cinnamon rolls

Introduction

Number of Servings: 20

Ingredients

    dough:
    4 cups white flour
    .5 tsp salt
    1 c skim milk
    2 tsp sguar
    2 tsp dry yeast
    water

    "Filling":
    .5c raisins
    2Tbsp cinnamon,ground
    4Tbsp sugar
    Corn oil

Directions

For the Starter dough mix 2 tsp sugar with 2 tsp yeast in .5c lukewarm water. Let it sit until it bubbles,
Meanwhile mix the salt and flour.
Mix the starter dough into the flour, add milk kneed to a soft dough that is not sticky. If needed add the rest of the water. Kneed until the dough develops bubbles, then cover with a dish cloth and let sit in a warm place for 50 minutes or until twice the size.

Then punch the dough down and kneed again. when it develops bubbles, roll the dough out until it is about 8" wide and 2' (=24") long. Spread the corn oil on it.
MIx the sugar and cinnamon and sprinkle evenly on top. Then sprinkle the raisins on top.
Roll the dough up along the width. Then cut into 20 pieces.

these set on a baking sheet which has been sprayed. Cover with a cloth and let sit in a warm place again until twice the size.

Bake for 30 minutes at 200'C or until brown on top.
