Ingredients

2 cups cooked Eden organic buckwheat, cooled and fluffed
1 cucumber chopped
2 small tomatoes, chopped
2/3 cup scallions or green onions
½ cup fresh mint (the more the better I think!) chopped
2 cups fresh parsely chopped
1 clove garlic minced
1 fresh lemon juice
1/4 cup olive oil
2 teaspoons sea salt
Directions
Combine all ingredients. Chill at least one hour. Serve on romaine lettuce in a pita (or eat it out of a bowl!)
