Shrimp with Mandarin Oranges

Ingredients

    * Shrimp raw tail on Colossal, 12 oz
    * Mandarin oranges Dole, 8 oz
    * Scallions, raw, 2 medium (4-1/8" long)
    * Ginger, ground, 2 tsp
    Soy sauce Angostura, 0.1 tbsp
    * Corn starch Argo 100% pure, 1 tbsp
    * Chicken Broth or Bouillon, 2 fl oz
    * Waterchestnuts (water chestnuts), 1 cup slices
    * Rotini whole wheat blend Ronzoni Healthy Harvest, 4 oz
    Spray pan with olive oil spray and stir fry seafood, ginger & optional soy sauce until done. Remove from heat and keep warm. Add green onions (scallions) & stri fry until crisp adding water or broth as needed to prevent sticking. In bowl mix cornstarch with chicken broth, then stir in pan until thickened. Gently add in seafood, mandarin oranges & water chestnuts. Heat thoroughly and pour over brown rice or noodles.
