Introduction

This dish is bursting with flavor and texture. These are also good grilled for family members or friends who may prefer their food cooked. This dish is bursting with flavor and texture. These are also good grilled for family members or friends who may prefer their food cooked.

Ingredients

    12 medium baby bella mushrooms

    Marinade
    c. balsamic vinegar
    c. olive oil
    2 garlic cloves, minced
    1 tsp. Italian seasoning
    salt & pepper to taste

    Stuffing
    Mushroom stems, chopped
    c. walnuts, finely chopped
    1 garlic clove, minced
    1 Tbsp. parsley, finely chopped
    2 scallions, while & light green parts, finely chopped
    tsp. dried basil
    1 small tomato, finely diced
    salt & pepper to taste
    Olive oil

Directions

Mix marinade ingredients together in plastic bag. Place mushroom caps in bag & marinate for at least 30 minutes.
Combine stuffing ingredients, drizzle with olive oil & mix. Stuff mushroom caps & serve with remaining marinade drizzled over mushrooms if desired.
