Trisha's Skinny Vegetable Soup

Ingredients

    1 15 oz can Broth of choice (Vegetable, Beef or Chicken)
    2 cups Low Sodium V-8
    1 Qt Water
    1 can Kidney Beans
    1 onion chopped
    2 med carrots chopped
    2 med carrots sliced
    1/2 large stalk celery chopped
    1/2 large stalk celery sliced
    2 sm/med zucchini sliced then quartered
    1 Tbsp Olive Oil
    Italian Seasoning
    Salt & Pepper

Directions

Saute chopped carrots, celery and onion in olive oil until softened. Add broth of choice (vegetable broth for a VEGETARIAN soup), V-8 and water. Add remaining ingredients. Bring to a medium boil then reduce to a simmer. Cook for 60-120 minutes. Vegetables will be al dente at 60 minutes and soft at 120. I cook as long as I have time for. Serve with parmesan cheese if desired.
