Ingredients

For 1 Serving:
1 cup whole wheat pasta (your choice)
1/2 cup of diced tomatoes- italian style works best
1/2 cup of pigeon peas cooked by package direction, can be found in frozen vegetable section.
1/2 cup of diced lean cured ham
1/2 tbsp olive oil
1 tbsp grated parmesan cheese
Directions
In a large pot bring 4 cups of lightly salted water to boil. Boil pasta to package directions.
Meanwhile in a small skillet heat olive oil on medium heat. Add in ham sauteing for 1 min.
Add cooked Pigeon Peas and drained diced tomatoes. Continue warming on medium heat for 5 mins.
Toss with pasta. Sprinkle with parmesan cheese and enjoy.
