Deep Dish Pot Pie

Fat and sodium are high simply because I used regular cream cheese and regular chicken broth. These can be readjusted with low fat cream cheese and low sodium broth.

Number of Servings: 4

Ingredients

    1.5 chicken breast, chopped into small pieces
    1/4 cup zesty italian dressing
    1/2 cup cream cheese
    1/2 cup chicken broth
    2 cup frozen veggies (I use corn and pease cup of each)
    1 deep die pie shell

Directions

Preheat oven to 350

Cook chicken pieces for 5-10 min in the zesty italian dressing. Once no pink is showing on chicken mix in cream cheese. Stir until melted.

Pour in chicken broth, milk and veggies. Bring to a boil and simmer for another 5-10 min to thicken.

Pour into a deep dish oven safe container. Reverse the pie shell so it becomes the top of the "pie". Make sure to cut slits into top of pastry so steam can release.

Bake for 30 - 45 min (when pastry is golden brown) remove and enjoy.

I make this is a 2 inch deep square pan and it yields 4 servings
