Dijon Chicken

Introduction

This actually serves 3 people if chicken breast is large so calories are reduced. This actually serves 3 people if chicken breast is large so calories are reduced.
Number of Servings: 2

Ingredients

    1 Tbsp or less of Light Olive Oil
    1 Onion diced
    3 cloves garlic minced
    1 cup fat and socium reduced chicken broth
    1/2 small container light sour cream
    1/4 cup dijon mustard
    Brown rice or whole wheat no yolk egg noodles





Directions

Place chicken in the oven and roast at 350 for 40 minutes or until almost cooked.
Saute onion and garlic in olive oil in saucepan until transluscent.
Add chicken broth
Add sour cream and dijon mustard.
Mix together and add chicken, cover and simmer for 15 - 20 minutes.
Serve over brown rice or whole wheat no yolk noodles
