Super Awesome Baked Falafel Balls

Introduction

Makes about 28 TBSP sized balls. Makes about 28 TBSP sized balls.

Ingredients

    1 large can chickpeas, rinsed
    3 small carrots, peeled
    2 stalks celery
    1/4 cup green onion, chopped
    2 tsp lemon juice, or more to taste
    1-2 tsp chipotle pepper powder (optional, spicy!)
    1 tsp olive oil
    3 cloves garlic
    2 tbsp flour
    1/4 tsp baking soda
    1-2 tbsp cumin
    .5-1 tbsp curry powder

Directions

Mix everything in a food processor until almost smooth.

Roll into balls, I used a TBSP to help form the size.

Bake in the oven at 350 for 45-55 min. Should be a bit crunchy on the outside but soft on the inside.
