Bruschetta Grilled Portabellas

Introduction

Ingredients

    1 6oz package portabella mushrooms (2 mushrooms)
    1-2 tbsp Fat free italian dressing
    pepper and salt
    1/2 cup canned diced tomatoes
    2 tsp. extra-virgin olive oil
    1 tbsp chopped fresh basil
    1 clove garlic, minced

Directions

Clean mushrooms with a damp towel. Brush with the dressing, sprinkle with a little pepper and spray with nonstick spray before grilling about 8 minutes per side or until tender. Meanwhile, combine the tomatoes, basil, olive oil, garlic and a dash of salt. Place mushrooms on a baking sheet, gill side up and divide tomato mixture evenly between them. . Broil 1-2 minutes until topping is warmed through.
