Asparagus Thing

Introduction

(Actually called Fresh Asparagus Pasta Salad, but around here it's known as Asparagus Thing) (Actually called Fresh Asparagus Pasta Salad, but around here it's known as Asparagus Thing)
Number of Servings: 5

Ingredients

    1 cup orzo
    1/2 cup each of sultana raisins and grated carrot
    1/4 cup thinly sliced red onion and corn kernels
    10 asparagus spears, trimmed and blanched, cut into 1 inch pieces
    2 tsp each dijon mustard, lemon juice, balsamic vinegar, honey
    1/2 tsp salt
    1/4 hot sauce
    1 clove garlic, minced
    1 tbsp olive oil or vegetable oil

Directions

Blanch asparagus before hand. (~8 minutes) Boil orzo before hand for 6 minutes, drain then combine with other ingredients.

Mix wet and dry ingredients separately. (Whisk wet ingredients into a dressing, then mix with dry ingredients) Refrigerate, then serve!
