Shrimp and Pasta

Introduction

Very simple but delicious dish.
Note: I only added 1 oxo pk to the sparkpeople ingredient list instead of the two in the recipe because it's only used for boiling the pasta and then discarded. I figured it's adding some salt but your not eating both pks.
Note 2: I decreased the amount of olive oil to 1 1/2 tbsp. in the sparkpeople ingredient list because there's always extra oil left behind from marinating and cooking, therefore you're not consuming the full amount in the recipe.

Ingredients

    2 pk. Oxo low sodium chicken broth
    Water, for boiling pasta
    225 g whole wheat fettuccine (dry)
    1 lb shrimp, peeled and deveined
    2 cloves garlic
    1 tsp. lemon juice
    2 tbsp. extra virgin olive oil
    Red pepper flakes or dried chilies for heat

Directions

Fill large pot about halfway with warm water. Add oxo. Bring to a boil.
Meanwhile, clean and shell shrimp. Place cleaned shrimp in a medium bowl. Add garlic, lemon juice and olive oil. Let marinate for a few minutes.
When water has come to a boil add pasta and cook according to package directions.
During the last few minutes of pasta cooking time add shrimp and marinade to a hot, frypan. Sprinkle with red pepper flakes. Cook until shrimp just turn pink. Don't overcook. This only takes a few minutes. Remove from heat. When pasta is cooked, strain and place back in pot. Add shrimp and mix together.
Serves 4.
