Turkey Whole Wheat Lasagna

Introduction

I tweaked the classic recipe by subsituting ground turkey, lowfat cottage cheese, egg substitute, and part-skim mozzarella for their higher-fat counterparts. Ingredients

    Extra Lean Ground Turkey, 16 oz

    1 onion, diced

    Hunt's Spaghetti Sauce (Garlic&Herb) 26 oz can

    Water 1.5 cup

    Cottage Cheese, 1% Milkfat, 1.5 cup

    Mozzarella Cheese, part skim milk, 8 oz

    Egg Beaters, .5 cup

    Parmesan Cheese, grated, 1 cup

    Whole Wheat Lasagna Noodles - 9

Directions

Preheat oven to 375 degrees.

Brown ground turkey and onion, drain well.

Add spagetti sauce and water; simmer 5 minutes.

Meanwhile, in a large bowl, blend cottage cheese, Egg Beaters, parmesan, and 1 c. mozzarella cheese.

Spread 1 c. sauce in bottom of 9 x 13 pan. Place 3 noodles on top of sauce and then spread another 1 c. sauce on top of noodles. Spread half of the cheese mixture on top of sauce. Make another layer of noodles, sauce, and cheese mixture. Last layer will be noodles, sauce, and remaining 1 c. mozzarella cheese.

Cover with foil and bake for 50 minutes. Uncover and bake another 10 minutes until cheese is browned.

Remove from oven and let set for 15 minutes.

Makes 8 large servings.
