Mediterranean Tofu Salad

Ingredients

    Tofu, Medium Firm- half of one package, diced
    0.25 C- Celery, diced
    0.25 C- Carrots, diced
    0.25 C- Red Onion, diced
    2 cloves of Garlic, chopped
    7- Kalamata Olives, chopped
    1- Sun-Dried Tomato in Water, chopped

    1 t Walnut Oil
    2 T Balsalmic Vinegar
    0.5 T Dijon Mustard
    salt, pepper, crushed red chili flakes if desired

Directions

Combine all ingredients and mix well.

Makes 4 half cup servings
