Anuradha's Vegetable Ice Cream

Introduction

My next door neighbour Anuradha is a very resourceful girl.Her 12 year old Anaghaa hates eating Vegetables-----but adores Ice Cream!!!!Anuradha devised this method of making Anaghaa eat Vegetables this way----she varies the Vegetables often but each variety tastes REALLY fabulous!!!!! Ingredients

    CALORIES 140/ 5gms.Sugar/SERVING WITH NO CALORIE SPLENDA
    CALORIES 204/ 21.5gms Sugar/SERVING WITH SUGAR
    INGREDIENTS
    500ml.Whole Milk
    250gms.Bottle Gourd(Dudhi/Lauki/Ghia/Lau/Calabash)
    8-10 Fresh Spinach Leaves
    50gms Fresh Cream
    50gms.Slivered Pistachioes
    Granulated Sugar to taste
    OR
    No calorie Splenda to taste
    3-5 drops Ice Cream Essence

Directions

PREPARATION
Peel and shred the Bottle Gourd.Blanch the Spinach Leaves and keep aside.Sliver the Pistachios and keep ready.
METHOD
Cook the shredded Bottle Gourd with Milk till well cooked and thick.Add sweetner(Sugar/Splenda) and cook till thick.Cool to room temprature.Blend in a Blender till smooth adding the blanched Spinach Leaves and the Ice Cream Essence.Keep in the Freezer till almost set.Remove and whip in the Blender till smooth.Return to the Freezer and leave till almost set.Again whip the Mixture in the Blender after adding the Fresh Cream till smooth.Stir in the Slivered Pistachios and mix well.Return to the Freezer and allow to set fully.Serve as a Dessert any time of the day.
TIP
You can do the same thing with Carrots,Pumpkin,Squash and Beetroots.Add different Essences to give different tstes and flavours.

    Bottle Gourd is a common Indian Vegetable so you may find both the Ice Cream Essence as well the Vegetable at an Indian Store.

    Really low Calorie even with Sugar---with Splenda it's a winner!!!!Try it out---really tastes fantastic!!!!

    You know Manasa you really should---only use light Cream not the Heavy one----tastes like Pista Ice Cream!!!By the way am going to post the recipe for Sudhir's Tea----I make it the same way---but he finds a different taste to it on certain days!!
