Introduction

Serve this over a salad that includes chopped fresh basil for maximum effect. My complete Thai inspired meal includes coconut rice, grilled chicken satay skewers, roasted green beans, and a side salad topped with this dressing. Yum! Ingredients

    Approximately 1 tbsp Extra Virgin Olive Oil
    Juice of 1 whole, fresh lime
    Dash of sea salt to taste

Directions

Juice the lime into a small jar. Add an equal amount of olive oil, approximately 1 tablespoon. Sprinkle with sea salt. Cover the jar with a leakproof lid and shake until thoroughly blended. Should yield enough dressing for 2 small salads.
