Chocolate Chip Cookies

Introduction

Flax seed and fat free sour cream is the twist. Dark chocolate chips for extra antioxidants. Can even substitute egg beaters though I have not tried that version.

Tip: for even more fiber, add 3 tablespoons of fibersure or benefiber.

Ingredients

    3/4 cup all-purpose flour
    1/4 cup ground flax seed meal
    1 1/4 cups white whole wheat flour
    1/2 teaspoon baking soda
    1/2 teaspoon salt
    1/2 cup (1 stick) butter blend like smart balance
    1/2 cup fat-free sour cream
    1/2 cup sugar or sugar substitute
    1/2 cup brown sugar
    1 teaspoon vanilla extract
    1 large egg, beaten
    1.5 tablespoons water
    1.5 cups (12 oz. package) dark chocolate chips

Directions

Cream together the margarine and the sugars. Add the sour cream and vanilla and continue to mix. Beat together the egg and the water, add to mixture and continue to beat until smooth.

In a separate bowl mix together the flours, flax, baking soda and salt. Add the flour mixture to the liquids and stir until combined. Fold in the chocolate chips.

Drop by rounded teaspoons onto greased cookie sheets. Bake at 325 degrees F for 12 minutes or until the bottoms brown.
Cool on wire racks.

3 dozen cookies - 1 cookie serving size
