Chick pea Salad

Introduction

This is a nice light salad that is perfect for a picnic since there's no mayonnaise in it. This is a nice light salad that is perfect for a picnic since there's no mayonnaise in it.
Number of Servings: 4

Ingredients

    2 cups (1 can) Chickpeas (garbanzo beans)
    1/4-1/2 cup Fennel, thinly sliced
    1 Tbls Olive Oil, Extra Virgin,
    1/4 cup Parsley, coursely chopped
    2 Scallions, sliced
    1 cup grape tomatoes cut in half
    Juice of 1 Lemon
    salt and pepper to taste

Directions

Drain and rinse one can chick peas. In a medium size bowl mix all ingredients. Add salt and pepper to taste. Can be served cold or room temperature. Makes 4 half cup servings.
