Terrific Turkey Meatloaf

Introduction

Number of Servings: 4

Ingredients

    16 oz ground turkey, 93% lean
    1 cup red peppers, chopped
    1/2 medium-sized onion
    1/4 cup Parmesan Cheese, grated
    2 tsp worcestershire sauce
    1 tsp paprika
    1 tsp pepper, red or cayenne
    1 tbsp garlic powder
    1 tbsp onion powder
    Dash of salt
    1 tbsp low carb, reduced sugar tomato ketchup (optional)
    1 large egg
    1 tsp black pepper

Directions

You will need a large bowl to mix your ingredients in and a small loaf pan to cook it in. I use the disposable aluminum pans for easy portion control and a quick clean up afterwards.
Strat by placing the ground turkey, onions and peppers in the bowl.
I add my spices which include paprika, cayenne pepper, garlic powder, onion powder, a dash of salt and ground black pepper.
Add the worcestershire sauce and one egg and work the spices through the meat mixture with your hands or a large spoon or fork. Add your grated parmesan cheese. This adds flavor and removes the excess moisture from your meat. The amount of parmesan you add depends on how moist or dry your meat mixture looks and feels. You should be able to form a patty or loaf without the mixture coming apart. If the the mixture is still too wet add more grated parmesan.
Then add the meat to the loaf pan and pat down into a loaf. Place your loaf pan on a baking sheet and place in a 350 degree oven for approximately 35-45 minutes.
You will able to tell the meatloaf is done by the color and you will see the clear juices bubbling around the edges of the meatloaf.
During the last 5 minutes of cooking you can glaze the top of your meatloaf with the ketchup if desired.

    I haven't tried this particular recipe, but I use a similar one (originally from Shape Magazine a couple of years ago). If you're looking to add more veggies to your (or your kids') diet, try adding some grated carrot. Once you cook the meatloaf, you don't even notice it's in there. - 6/11/08

    I really like this, but cut back a bit on the red pepper. And instead of making one meatloaf, we divide the mix into muffin tins to make individual meatloaves. - 9/6/07

    This is very easy to make and is delicious and spicy! I would suggest cutting down on the cayenne pepper if you don't like the heat! But I loved the heat! Thanks for sharing! - 4/26/09

    This was really yummy! I only used 1/2 a red pepper, and left out the cayenne pepper completely. Also, I added some worshishire sauce and creole seasoning to the top just before I slid it in the oven - 6/25/08

    I cut back on the cayenne pepper and found I had to let it bake longer to be done but I thought it was pretty good and my husband loved it. I made it in a 4 load pan and that way we had 2 loafs to freeze for another day. - 6/15/08

    A tsp of black pepper and a tsp of red pepper is too much pepper! I will only use 1/2 tsp of one or the other, not both, next time. My husband didn't like it because of the pepper, but he didn't even notice that it was turkey and not beef! - 6/17/08

    I make this recipe without the peppers and red pepper. Still used some bread crumbs with the parmesan as a personal preference. This was my first ever meatloaf to make, and my husband and I were pleasantly surprised at how delicious and juicy it was! I've already made it 2 or 3 times since:] - 7/30/07

    I just wanted to mark this for my own purposes so that I know not to make it again. To each their own, and everyone's tastes are different. For me, not the right spices, so I won't make this variation again. It was, however, very moist. - 6/5/08

    UGH. Noone in my family could eat this. I only used 1/2 the onion, and 1/2 the onion powder and there was still WAY too much onion flavor. Didn't add the red peppers, and even the little cayenne that I added made it WAY too HOT. Way too many spices. You couldn't even taste the turkey. - 4/7/07

    this is delicious! i didnt have any garlic or onion powder so i just minced some garlic cloves and it was delicious! i was a little skeptical it would hold together but the parmesan worked really well. my husband took the leftovers to work and i already have recipe requestsfrom his co-workers! - 11/15/07

    I love this meatloaf and so does my husband, but I leave out the red peppers and cayenne pepper. I have always hated regular hamburger meatloaf, but the turkey meatloaf is now one of my favorite dinners. I also make it into patties when I'm in the mood for a burger. Yum! - 6/7/07

    This was very good! I used 99% fat free turkey, added a carrot as another user suggested to up the veggies, and played around with the spices a bit. My roommate liked it as well and I will definitely make it again. Really tasty and healthy at the same time! - 11/9/09

    I'm glad I took others' advice and cut the amount of both peppers in half. It was missing something for taste ... like green chilies, mushrooms, more ketchup, tomato sauce or cheese. I guess we're just used to the taste of regular meatloaf. This is between Good and OK. - 3/30/09

  • Made this last night and it was really good. I did substitute fresh garlic for the garlic salt as that's a pet hate for me, omitted the onion powder and increased the fresh onion to a whole one and instead of cayenne I used crushed red chillies.

  • I used egg beaters & Mrs. Dash Southwest Chipolte seasoning. Used only half the red pepper and added in some grated carrot.   • Made this tonight into 12 mini-loaves (muffin tin) instead of one big loaf. Added 4 diced mushrooms as well. It was really delicious and moist!   • This was so good! ! I switched scallions for the onion powder (I like things fresh!) and used a bit less onion. Also, green pepper instead of red and skipped the black pepper.   • I made this recipe on Sunday and it was delicious. I did tweek the recipe a little by cutting back on the cayenne pepper but adding hot chili sauce. I like spicy foods and this did the trick.   • Reallyreally good. Everyone loved it including the teenager and husband who want to hate anything that is "low fat" I gave it a shot of chalupa to zip up the flavor.
