Tomato Chicken

Introduction

Great, basic recipe if I'm just cooking for myself. I use lower sodium tomatoes. Add in any herbs you like! You can definitely build upon this recipe. Number of Servings: 1

Ingredients

    1 Boneless, skinless chicken breast
    1/2 cup canned diced tomatoes, lower sodium
    1/4 cup chopped onion
    1 clove garlic, chopped
    2 fresh basil leaves, chopped
    1 TBLS olive oil

Directions

Cook chicken until done. Dice into pieces and set aside. In small skillet, heat olive oil. Add diced onion, garlic, and freshly ground black pepper. Saute until onions are fully cooked. Add tomatoes, diced chicken and basil. Simmer until it thickens a bit. Great with a small salad, or over a small serving of pasta.
