IntroductionOriginal Recipe is from the book "Eating Gluten Free" by Shreve Stockton. The original recipe calls for Xanthum Gum, butter and 1 egg but due to multiple food allergies I made the following substitutions. The original recipe calls for Xanthum Gum, butter and 1 egg but due to multiple food allergies I made the following substitutions.
1 C sorghum flour
1/4 C Millet flour
3/4 tsp baking soda
1/4 tsp salt
1/2 tsp guar gum
1/2 C Earth Balance Soy Free Margarine, softened
1/2 C brown sugar
1/4 C sugar
1 tsp vanilla
1 1/2 tsp Ener-g Egg Replaced prepared according to the box (=1 egg equivalent)
3/4 Cup Enjoy Life Chocolate Chips
Mix flours, baking soda, salt and guar gum and set aside.
Mix egg replacer for one egg according to directions on box and set aside.
In a large bowl, whip together the softened margarine and sugars.
Add Vanilla and egg replacer.
Gradually stir in the flour mixture, about 1/2 cup at a time. Once mixed, stir in the chocolate chips.
Spoon the batter into an ungreased 8-inch square pan and bake for 15 minutes.
Allow to cool slightly, then cut into bars.
