Potatoe Egg Casserole

Ingredients

    2 cups diced raw onions
    1 cup diced bell peppers, mixed colors
    1 tsp olive oil
    8 eggs
    1 cup nonfat dry milk powder
    1 cup water
    1 tsp salt
    1/4 tsp black pepper
    1/2 Tony Chachere’s Creole Seasoning if available
    4 oz old cheddar cheese grated
    4 oz part skim mozzarella cheese grated
    6 cups frozen hash brown potatoes

Directions

Saute the onion and peppers in the olive oil. In a large bowl mix the eggs, then add the mild powder and the water, salt, pepper and seasoning. Whisk well to incorporate the powder evenly. Than add the frozen diced potatoes, the bacon and the cheeses. Mix well, and place in baking pan sprayed well with cooking spray. Bake until golden on top.
