Introduction

Orig recipe from a diabetic web. I made a few changes (added part whole wheat bread and used eggs in lieu of egg substitute) and added walnuts and dried currants. Ingredients

    1 1/4 C lowfat milk
    1/2 C liquid egg sub or 1 egg + 1 egg white
    1/3 C sugar
    1 tsp vanilla
    1/8 tsp salt
    1/8 tsp ground nutmeg
    1/2 tsp cinni
    1/2 tsp cinnamon
    3 slices whole wheat bread
    3 slices cinnamon raisin bread

Directions

350 degree oven - makes 12 muffin cups

Preheat oven

Cut bread into 1/2 in pieces

In med bowl, mix milk, egg, sugar, vanilla, salt, nutmeg, cinnamon

Add the bread slices and mix until moistened

Line a muffin tin with paper liners and fill full

Bake for 30-35min until golden brown and pudding is set.
