Quinoa Salad

Introduction

If you have been wanting to try quinoa, this is the dish to start with :) If you have been wanting to try quinoa, this is the dish to start with :)
Number of Servings: 8

Ingredients

    2 cups chicken stock
    1 cup quinoa
    1 cup corn
    1 can garbanzo beans(chickpeas), rinsed and drained
    1/2 cup fat free feta
    3 Tbsp fresh basil, chopped
    2 Tbsp fresh flat leaf parsley
    3 Tbsp olive oil
    2 Tbsp lemon juiced
    1 cup cooked, diced beets

Directions

-Boil chicken stock, add quinoa, return to boil, reduce to simmer, cook 15 minutes or until stock is absorbed. Set aside to cool.
-In a bowl, combine Quinoa, corn, beets, garbanzo beans, feta, onion and herbs
-Whisk together oil, lemon juice and add to bowl, mix to coat evenly
salt and pepper to taste

Makes 8-1 cup servings
