3/4 c low fat cottage cheese
3/4 c reduced fat sour cream
1/2 tsp vanilla extract
1/4 tsp baking soda
3/4 tsp baking powder
3/4 c flour
pinch of salt
2 lg egg whites
2tsp of sugar
1/4 c syrup
1 c blueberries
1. Mix together cottage cheese, sour cream and vailla
2. In separate bowl, mix dry ingrediants except sugar and stir in cheese mixture. Using a mixer whisk egg whites and sugar until soft peaks form. Mix 1/3 of whites to cheese mixture and then fold in rest of whites.
3. Spray griddle with cooking spray. 1/4 c of batter for each pancake. Cook 2-3 min on side, flip and cook for 1-2 min on other side.
4. Syrup- combine syrup and blueberries in a saucepan over low heat 2-3 min.
