Cabbage Rolls

Ingredients

10 oz. ground turkey
1/2 onion, chopped
1/2 red bell pepper, chopped
1/2 cup brown rice
8 cabbage leaves
1/4 cup skim milk ricotta
1 serving egg whites
1 1/4 cup Classico spaghetti sauce
Directions
Preheat oven to 400.
Brown ground turkey, add onions, bell pepper, mushrooms and rice. stir in 1/4 to 1/3 cup of spaghetti sauce. Set aside
Steam cabbage leaves to soften.
Mix ricotta and egg whites.
Drop a spoonful of ricotta mix into cabbage leaf. Top with ground turkey mixture. Fold leaf closed and place in casserole dish. Repeat with 7 other leaves.
Top with remaining spaghetti sauce and sprinkle mozzarella on top. Bake for 30 minutes.
