Beef Heart with Mushrooms

Introduction

I spent a month in Italy in 1968 and this recipe came from Ada Boni's Talismano della Felicita, "which is universally recognized in Italy as the standard national cookbook". Despite the weirdness of eating heart, it is a wonderful dish. Heart can often be found in Mexican markets. Ingredients



    Beef heart, raw, 24 oz, (1 1/2 pounds) sliced thin
    dried mushrooms, 2 oz (2 Tbs.)
    Olive Oil, 1 tbsp
    Salt, 1/4 tsp
    Pepper, black, 1/8 tsp
    Tomato Paste, 2 Tbs.
    Water, tap, 3/4 cup

Directions

Soak dried mushrooms in cold water 30 minutes. Rinse well. Drain and place in saucepan with 1 Tbs. olive oil. Add half the salt and pepper and brown lightly. Dilute tomato paste with water, add to mushrooms, cover pan and cool over moderate flame 45 minutes.

Heat remaining 2 Tbs. olive oil in frying pan. Add slices of heart and season with remaining S&P, and cool over lively fire 5 minutes. Add tomato and mushroom sauce to heart. and cook together 1 minute and serve. Do not overcook.

  • Hi! I did not rate because I have not yet made this. I have a question for the submitter or anyone that can help. I loathe mushrooms, there is something about the feeling in the mouth and on the teeth...is there something else that can be used?? - 4/19/10

    No, that's pretty much the flavor, but these are dried mushrooms. Do you have a problem with them to? Taste is completely different and the "mouth feel" is as well. If you live near Raleigh I can have you over for dinner next time I make it and you can check it out!
