1 Tbsp Extra Virgin Olive Oil
1/2 Yellow Onion, chopped
2 C fresh asparagus, cut into 1" slices
4 large fresh eggs
1 Tbsp shaved Parmesan Cheese
1/8 C 1% Milk
1 tsp Italian Seasonings (such as McCormick's Italian Herb Seasoning Grinder)
In a medium-sized oven-proof skillet, heat olive oil over medium-low heat. Add onion and saute until soft, about 2 minutes. Add asparagus and saute until tender-crisp.
Meanwhile, combine eggs, cheese, milk and Italian seasonings and beat until well mixed. Pour over vegetables in skillet and stir. Continue to stir mixture in skillet, cooking until eggs are almost set.
Remove skillet from stove-top and place in pre-heated oven. Cook until top is golden, 10-12 minutes.
