Kahlua Cake

Introduction

Delicious swirled bundt cake. This is not low fat or low sugar. But a treat for special occasions. I wanted to know the nutritional values so I can treat myself from time to time.

Recipe calls to set your oven at 350 deg, but if your oven cooks on the fast side, adjust to 325. Due to all the sugar, it burns easily!!

Number of Servings: 20

Ingredients

    1 pkg Butter flavored cake mix
    4 eggs
    1 c. sour cream
    1 box (3.5 oz) instant vanilla pudding
    1/3 c. Kahlua coffee flavored liquor
    1 tsp vanilla extract
    1 c. chopped pecans
    1 c. brown sugar, packed
    3/4 c. canola oil (or if out, I used 1/4 c. canola; 1 stick melted smart balance 50/50 butter olive oil spread)

Directions

Preheat oven to 350 degrees (but if your oven cooks quickly, only bake at 325 degs - cake burns easily due to high amount of sugar).

Place cake mix into mixing bowl and add one egg at a time, mixing after each one. Add pudding, oil, sour cream, and vanilla and mix until well combined.

Place half of cake mixture into another bowl. Add brown sugar, pecans, and kahlua and mix well.

Spray bundt pan with PAM.

Pour half of the pecan cake mixture into the bundt pan, and level out. Then pour all of the vanilla mixture into the pan, and spread evenly over first layer. Top off with rest of pecan mixture and spread evenly.

Bake for up to 75 minutes (1 hr 15 mins), checking cake at 1 hour for doneness.

Cool in pan for 30 minutes, then turn out onto serving plate.

Makes approximately 20 servings.
