My husband makes this on Sunday mornings and we have a quick and easy microwave breakfast for several days. Just add fruit and whole wheat toast for a filling meal. Ingredients

3 eggs
1 1/2 cups nonfat milk
1/2 lowfat baking mix
dash pepper
2 slices turkey ham, diced
3/4 cup shredded 2% cheddar cheese
Directions
In a blender, or with a mixer, combine eggs and milk. Add biscuit mix and pepper. Mix until well blended. Add meat and cheese. Pour into greased 9 inch pie plate.
Bake at 350 degrees for 30-35 minutes or until knife inserted near the center comes out clean. Let stand for 10 minutes and then cut into 8 servings.
