Southwest Browns

Number of Servings: 6

Ingredients

    5 Med. Potatoes - diced
    1 medium onion - chopped
    1/2 can mushrooms - sliced or ends/pieces
    1 can no salt added Corn
    2 Tbsp Olive Oil
    Seasoning of choice

Directions

Saute in 1 Tbsp Olive Oil - onion, corn, and mushrooms until corn just starts to brown. Remove from pan and set aside.
Heat remaining olive oil and add potatoes, stir to coat.
Cover and cook over med heat for 10 minutes.
Add onion, corn, and mushrooms to potatoes stir to mix thoroughly.
Cook an additional 20 minutes stirring occasionally until potatoes are browned and cooked to desired tenderness.
Makes approximately 6, 1-cup servings
