Gail's Split Pea Soup

Introduction

Lowfat, low sodium soup Lowfat, low sodium soup
Number of Servings: 7

Ingredients

    2 cups dried green split peas
    2 medium carrots, grated
    1 large onion, chopped finely
    2 T. Bertolli Extra Virgin Olive Oil
    2 tsp. sea salt
    1 tsp. black pepper
    1 tsp. cayenne pepper
    1 can Swanson's 100% fat free, 33% low sodium chicken broth
    4 cups water

Directions

Rinse split peas several times in clear water. Cover with water and bring to boil. Grate 2 medium carrots and chop 1 large onion and add to peas and water. Add can of chicken broth and season. After coming to a boil, turn heat down to medium low and simmer until done.
