I was looking for an easy. had on hand items, recipe to make a low fat muffin. I was looking for an easy. had on hand items, recipe to make a low fat muffin.Number of Servings: 18
Ingredients

2 cups whole wheat flour
1/2 cup sugar
2 tsp baking powder
1 cup fat free yogurt
1/2 cup fat free milk
1/4 cup liquid egg substitute
1 cup blueberries
1 TBsp Flax seeds
Directions
Prepare muffin pans with paper liner or by spray PAM
Mix flour, sugar, & baking powder
mix liquid ingredients in separate container (I use a 2 cup measuring cup)
Gently fold in liquid ingredients & blue berries just until mixed
Fill muffin cups 3/4 full & sprinkle a bit of Flax seeds on top (included in nutrition count)
Bake in 400 degree over for 20 - 25 minutes.
