Unfortunately, there isn't much healthy about these lemon bars! This makes a sweet, tart lemon bar. It has a shortbread crust and a delicious filling, which is firm and crackly on top, and soft and custardy in the middle. It is a two-stage construction that takes a total of about an hour. Ingredients

    2 cups flour
    cup powdered sugar, plus a little for dusting the surface
    1 cup (2 sticks) butter, melted
    4 eggs
    2 cups granulated sugar
    1/3 cup lemon juice (1 large or 2 small-med)
    cup flour
    teaspoon baking powder

Directions

Preheat oven to 350 degrees.
Sift together 2 cups of flour and powdered sugar into a big bowl. Blend melted butter into flour with fingers or pastry blender. Press into an ungreased 9x13 inch pan, going up the side a bit (about an inch or more). Bake for 20-25 minutes, until light brown.
Sift together cup flour and baking powder. Beat eggs until a lemony color. Add granulated sugar slowly. Beat well. Add lemon juice, then flour and baking powder. The crust should be done baking. Pour filling over crust and bake for 25 minutes more. When cool, sift a little powdered sugar over the top.
Makes 16 3x2" bars, or you could cut the calories and fat in half by making 32 1.5x2" bars!
