Introduction

Number of Servings: 5

Ingredients

    Lean boneless pork loi, trimed and thinly sliced 3/4lb 340g
    canola oil 2 tsp 10ml
    paprika 1/2 tsp 2ml
    ground ginger 1/2 tsp 2ml
    freshly ground pepper 1/2 tsp 2ml
    carrots, thinly sliced on diagonal 2
    green pepper, cut into large slivers 1/2
    red pepper cut into large slivers 1/2
    small onion, siced lengthwise into wedges 1
    can of pineapple tidbits, drained, juice reserved 14oz 398ml
    vinegar 2 Tbsp
    brown sugar packed 1 Tbsp
    reserved pineapple juice 1/4 cup
    low-sodium soya sauce 1 Tbsp
    ketchup 1 Tbsp
    cornstarch 2 Tbsp

Directions

Saute pork incanola oil inn large frying pan for 1 min. Sprinkle with paprika, ginger and pepper. Saute until no pink remains i pork.
Stir in next 4 ingredients.
Reserve 1/4 cup pineapple juice. Set aside. Add remaining juice and pineapple to pork mixture. Drizzle with vinegar. Sprinkle with brown sugar. Stir. Bring to a boil. Cover. Simmer for 30 min. until carrot is tender.
Combine remaining 4 ingredients in small bowl until smooth. Stir into pork mixture. Heat and stir until boiling and thickened. Makes 5 1/4 cups. Serves 4
