Number of Servings: 16

Ingredients

    1 cup + 3 TBLS flour
    3/4 cup sugar
    1/2 cup butter
    1 egg
    1 egg white
    juice from 1-2 lemons
    zest from 1 lemon
    1/8 tsp salt
    1/8 tsp baking powder

Directions

mix 1 cup flour, 1/4 cup sugar, salt and butter like a pie crust. Tap mixture in the bottom of 8 X 8 pan. Bake at 350 for 10-12 minutes until brown. Cool. Mix juice from lemons, 1/2 cup sugar, baking powder and 3 TBLS spoons flour into whisked eggs. Pour over the crust and bake 20-25 minutes until set.
