Potato Salad

Ingredients

    5lbs potatos
    12 boiled eggs
    30 spanish olives with pimento & juice
    1 large finely chopped onion
    1 cup mayonnaise

Directions

boil eggs & potatos separately. let cool. shell eggs and separate yolks. chop whites. mash yolks, and add cup of mayo, and about 1 cup of olive juice. chop onion, and add to the mix. cut up potatos into small pieces and mash some. finely chop olives with pimento, mix all together. If dry add more olive juice.
