Low carb, High FiberA friend told me of a recipe she found in Women's World Magazine, from the O2 Diet book, that was high in fiber & protein & antioxidants!! I decided to change it to make it low carb: I replaced the 2 cans of Kidney beans & 1 can of black beans, with soy beans. Can't wait to try it! Low carb, High Fiber

Ingredients

1 Tbs extra-virgin olive oil
2 medium red onions, finely diced
2 large sweet potatoes w/skin, diced into 1/4" cubes
1/3 tsp dried oregano
2 1/2 (32oz each) carton low-sodium chicken broth
2 1/2 tsp sea salt
1 tsp ground cumin
1 tsp black pepper
16 cups (1#) fresh baby spinach
8 cups chopped kale
4 cans Organic Soy Beans, white or black, drained
diced red pepper
1 Tbs. parmesan cheese
Directions
Makes 8 (3-Cup) Servings
Heat oil in larg pot over medium-high heat. Saute onions,
5 minutes. Stir in remaining ingredients except bell pepper;
bring to a boil.
Reduce heat; cover & lightly boil until sweet potaoes are soft, 12-15 minutes.
Adjust seasonings. Store in individual containers in the fridge for up to 4 days. Heat before serving. Garnish with bell pepper & 1 Tbls parmesan cheese.
