Maryann's White Chili with Tomatoes

Introduction

Number of Servings: 8

Ingredients

    cooking spray
    1 cup chopped onion
    2 small garlic cloves minced
    2 pounds of boneless, skinless chicken breast
    2 cans 99% fat free chicken broth
    2 teaspoons dried basil
    1 tablespoon chili powder
    3 cans white beans\
    4 cups fresh tomatoes chopped
    1 tablespoon diced canned green chilis
    (or substitute 2 cans rotel for tomotes and chilis)

Directions

Cut chicken into cubes. Sear chicken using cooking spray. Cook onion using cooking spray for 1 minute. Add garlic and cook another minute. (We do this in the bottom of the soup pot) Add chicken and all the other ingredients to the onions and garlic in the soup pot. Bring to a boil, reduce heat and simmer for about 10 minutes.

Makes about 8 pint sized servings
