Introduction

This recipe actually make an extra cup of chicken salad for sandwhiches...so the nutritional is not accurate....I calculated 12 servings, but did not include the additional cup of mix.... This recipe actually make an extra cup of chicken salad for sandwhiches...so the nutritional is not accurate....I calculated 12 servings, but did not include the additional cup of mix....
Number of Servings: 12

Ingredients

    Anything you would like to make a chicken salad...for this calculation, I used:
    1/2 cup corn
    1/2 cup black beans
    1/4 cup jicama diced
    1/4 cup onion diced
    1 c. monterey jack/colby shredded cheese
    2 tsp brown mustard
    1/2 c. lite mayo
    2 cups shredded chicken breast
    2 cans reduced fat crescents

Directions

Mix all ingredients together,except rolls. Place rolls on baking sheet or stone in a sunshine shape. Use 1 ounce scoop to scoop mix onto each crescent. Fold over - use extra can to enclose the mix. Bake at 350 for about 20 minutes...might take longer. Bake until rolls are golden brown.

Makes about 12 2" servings
