1 tsp olive oil
1 medium onion sliced
2 six inch zucchini or other summer squash, sliced
2 medium tomatos cubed
1 cup shredded Colby-Jack cheese
Put in sliced onion
Cook onion in olive oil until slightly browned.
Put in sliced squash and cubed tomatos
Cover and simmer until squash is cooked.
Turn heat to low.
Put in Cheese, cover, heat until cheese is melted
